Apple and Squash Pastry Recipe
Makes 40-50 pastries at only 10 calories each! Very high source of vitamin A, vitamin C, and potassium. Virtually no fat and very low in sugar. Great for Christmas, potlucks, parties, or just to satisfy a sweet tooth.
Ingredients
4 sheets phyllo pastry (I used compliments brand)
Half a butternut squash (approximately 1 cup)
2 small apples
1/4 tsp cinnamon
1 tbsp orange zestInstructions
1. Cut apples and squash into small cubes and put them into a pot. Fill the pot with water until everything is submerged. Bring to a boil and then simmer for 10 minutes or until the apples and squash are soft.
2. Drain the water.
3. With a potato masher, mash the apples and squash.
4. Add cinnamon and orange zest into the filling and mix thoroughly.
5. Cut the pastry sheets into squares that are 4” by 4”.
6. Spoon approximately 1/2 tablespoon of the apple/squash mix onto the middle of a pastry square. Fold the corners of the pastry into the center and twist. Be careful to not break the pastry.
7. Spray two baking pans with cooking spray. Place the pastries on there.
8. Bake for 10 minutes at 375°F.
